eg switch($_GET['function']){
case "Add":
call add()
break;
case "Delete":
call delete()
break;
}
define the function somewhere else such as an included php file.

I now know that you want to put the variables to be included in the function when its called AND then its setup.If there is a problem I would suspect the calling of the function. When you call it you need to specify the parameters from your form in the brackets, otherwise your data from the form can't get into the function.
so where you call it with:
add();
replace it with
add($code,$name,$description,$sizes,$colours,$category,$price,$thumb,$picture);
Also, I have noticed potential security holes and possible probs when inserting a record.
Try and get the script to add a record by following my advice, and then I will help you to make the script more secure
Would making a lot of the functions into one file slow the loading for all users.
i.e Having the category select, product select and product display in one file or would it be better to have them in seperate files.

Try it and find out...Best way to ensure it works is to pass the session id on every URL.If a Session Variable has a value added to it when its in a function, would it be availible on another page if there was a header() after it?

Probably not a lot. Depends how big the file size is.Would making a lot of the functions into one file slow the loading for all users?

Are you registering them properly? e.g. session_register("name"); and NOT session_register("$name");

; Argument passed to save_handler. In the case of files, this is the path

; As of PHP 4.0.1, you can define the path as:
; session.save_path = "N;/path"

; a more efficient layout for servers that handle lots of sessions.
; NOTE 1: PHP will not create this directory structure automatically.
